Irish Apple Cake
Ingredients
Streusel Topping
- ¾ cup wholemeal spelt flour
- ¼ cup rolled oats
- ½ cup coconut sugar
- 1 teaspoon salt
- 85 grams butter or coconut oil
Irish Apple Cake
- 115grams butter or coconut oil
- ½ cup coconut sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 ¼ cup wholemeal spelt flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- Pinch salt
- 1/3 cup oat milk
- 2 Granny smith apples, peeled and sliced thinly
Instructions
- Preheat oven to 180 degrees and line a 9-inch cake tin or standard bread tin
- In a medium bowl combine all Streusel dry ingredients and mix well, rub in cold butter until fully mixed through the texture should be like coarse breadcrumbs, set aside
- Cream butter and sugar for the Apple cake – beat until light and fluffy
- Add vanilla and then beat eggs into mixture
- In a separate bowl combine all other dry ingredients
- Fold wet ingredients into dry ingredients and add milk, if mixture is a little to thick add a bit more milk
- Transfer into prepared tin, lay sliced apple on top of mixture
- Cover apple with streusel topping, push down lightly to compact
- Bake for roughly 45-55minutes or until top is crisp
- Remove from the oven and allow to cool before removing from tin
- Enjoy, pair back with your favourite tea and even a little ice-cream or custard to spoil yourself. Keep in a airtight container for up to 4 days.
