Our Favourite Nut Free Energy Balls

Energy balls are my go-to snack when I’m craving something sweet or just a little peckish, they taste like dessert, but are actually good for you.
All you have to do is throw your favourite healthy ingredients into a food processor, blend, roll into a ball and enjoy. They are the perfect snack to make at the beginning of every week offering you a densely nutritious and delicious healthy snack on the go.
What you will need
- 100grams Seed Mix (Pepitas/Sunflower Seeds)
- 75 grams Pitted Dates
- 75 grams Apricots
- 30 grams Goji berries
- 50 grams Cranberries
- 2 TBS Desiccated Coconut (+ some for rolling in)
- 2 TBS Cocoa Powder
- 2 TBS Hemp Seeds
- 2 TBS Coconut Oil
- 1 TBS Honey
- 1 TBS Chia Seeds
- 1 TSP Vanilla extract
Put the seed mix in the food processer and give a quick blitz, add all remaining ingredients and blend together until combined. Roll into bite sized balls and then roll in coconut to coat. Store in an airtight container in the fridge. Voila quick and easy bite sized snacks to help you stay on track.
